Italian Sausage Soup with Tortellini
1 pound low fat Italian sausage
1 cup chopped onion
1 teaspoon minced garlic
6 cups beef broth
1/2 cup water
1/2 cup red cooking wine
2 (14.5 ounce) cans fire roasted tomatoes
1 cup thinly sliced or diced carrots
1/2 tablespoon packed fresh basil leaves
1/2 teaspoon dried oregano
1 (8 ounce) can tomato sauce
1 1/2 cups french style green beans
8 ounces fresh tortellini pasta
3 tablespoons chopped fresh parsley
I couldn't get enough of this soup! It has a nice spice to it with the fire roasted tomatoes. We used a low fat mild Italian sausage for a little healthier version so if you use a normal sausage you may want to skim off the fat from the top of the soup before you add the pasta.
