Salami Tortellini Salad
Ingredients:
1/2 cup very thinly sliced red onions
1 (9-ounce) package cheese or spinach tortellini, cooked and drained
4 ounces Genoa salami, sliced into thin strips
1/2 red bell pepper, diced
1/4 cup parsley
Balsamic vinegar salad dressing
salt & pepper
Directions:
Soak diced red onions in a small bowl of ice water for 10 minutes. Drain.
In a large bowl, combine the onions, cooked tortellini, bell pepper, and salami. Lightly toss pasta until combined. Drizzle with balsamic vinegar salad dressing. (I just eyeballed this part) Lightly season with salt, and pepper if necessary. Stir in chopped parsley just before serving.
I ended up eating all of this since my hubby doesn't like bell peppers but really enjoyed this pasta salad. I used a white wine salami that I bought at World Market. I think the next time I try this recipe I would use spinach tortellini for more flavor!
