Stir to combine and let tomatoes simmer over medium heat for about 3 minutes. Add the cooked pasta and shrimp back to the skillet. Roughly chop a handful of parsley leaves and sprinkle over top before serving.
If you are looking for a meal on a budget this is a really good one. We have been working on a food budget because my husband and I are penny pinching right now so my goal is to make recipes that aren't very expensive to make but still yummy. (Also can have some leftovers for the next day) This dinner was cheap and I really only had to buy the parsley and shrimp since I had everything else on hand. So I hope you enjoy this recipe, I want to make this with chicken instead of shrimp and try that!
